Congee is a rice porridge eaten in some form or another, with one name or another across Asia. Often eaten for breakfast with a variety of topping, or commonly as a Sick Day food with chicken or pork. It’s kinda the Asian version of a bowl of chicken soup. In this version I’ve used curry spices and smoked salmon, a bit of a riff on Kedgeree. This recipe serves one – perfect for duvet days.
