How to soft Scrambled-Eggs

'Tis the season for flavored vodka. Fa-la-la-la-laa la-la-la-la Make it now for New Year's cocktails. Fa-la-la-la-laa la-la-la-la! My recipe for Raspberry & Rose Vodka. A fab mixer for prosecco and champagne cocktails. In a food processor blend a 700/750ml bottle of vodka with 300g fresh or frozen raspberries. Pour into a large preserving jar or 1 litre carton and leave for a week to infuse. After a week strain the mix through a very fine sieve, or a standard sieve lined with a jelly bag or coffee filters. Those fancy, extra strong kitchen towels will work too. Take about 1/3 cup of the vodka heat it either in a saucepan or a microwavable bowl for about 1 minute. Stir in 4 tablespoons of caster sugar until dissolved and then pour the sweetened mixture back in to the large bowl. Flavour with rose water. How much you use will depend on your brand as they all have different strengths. Start with 1 teaspoon, taste and adjust. I used 2 tablespoons for mine. Decant in to gifting or storage bottles. Research as shown a link between increased consumption of fermented foods and reduced social anxiety. The theory is that the beneficial bacteria in these foods is responsible for this effect. Kefir (think pourable yogurt) is one of the naturally rich probiotic foods and it is easy to incorporate into recipes such as this one for (probiotic AND prebiotic) Black & Blue Breakfast Smoothie. Ingredients A handful (about 60g) each of sweet blackberries and blueberries, fresh or frozen 1 small banana 2tbsp oat bran 150ml whole milk 50ml kefir A few drops of vanilla, if you like (I like) 1stp honey (optional to taste) Method Throw everything into a blender and blend until smooth. A super-great start to your day that your body will thank you for. Just made a quick batch of lemon curd to slather over some pancakes later. The recipe (link in bio) makes enough for one jar, which is great because you don't always need 4lbs of the stuff. One of my favourite solo meals. An outrageous amount of garlic sautéed over a low heat in plenty of olive oil and chopped rosemary. Then chopped kale softened for a couple of minutes, and then butter beans gently stirred in until cooked through and seasoned with preserved lemon brine and lots of pepper. Dark Chocolate Rye Banana Bread This recipe yields a rich, moist loaf. The rye gives a deep and complex flavour and a nuttiness that complements the banana. I tried this recipe with milk chocolate and, to my taste, it just doesn’t work. Milk chocolate doesn’t have enough cocoa strength to stand up to the rye and makes the whole thing sickly sweet. Also, rye flour has a lower gluten content than standard wheat flour so don’t expect a domed top to your loaf, it will rise but more slowly and with a flatter top. Final thing: I am serious when I say you need super-ripe bananas. I’m talking about bananas that are almost completely brown with thin skins. Anything less is just pretending. Ingredients: 2 super ripe bananas 150g softened unsalted butter 3tbsp flavourless oil (e.g. sunflower) 150g light brown sugar ¼ tsp mixed spice ½ tsp vanilla bean paste 2 large eggs, beaten 200g wholemeal rye flour 50g self-raising flour 1½ tsp baking powder 150g dark chocolate broken into large chunks 2-3 tbsp cocoa nibs for the top Method Heat the oven to 170C/Fan 150C/Gas 4. Grease and line a 2lb loaf tin. Mash the bananas with a fork to a rough puree and then stir in the eggs. In a separate bowl sift the baking powder and self-raising flour into the rye flour. Set both aside. In a mixer set with a whisk or paddle, whip the butter and oil until light and soft. Add the sugar, mixed spice and vanilla and whisk until pale and fluffy. On a low-medium speed add the eggs mixture in three additions, alternating with the flour. Be sure to scrape down the side of the bowl to make sure the mixture is well combined. Add the chocolate and fold in gently with a metal spoon. Spoon in to your prepared tin, level the surface of the batter with the back of a metal spoon and sprinkle generously with cocoa nibs. Bake in the centre of the oven, until a skewer inserted into the middle of the cake comes out clean.
