"Strawberry Mousse Pie! When I made the Key Lime Mousse pie I had an extra cup of soaked cashews to use up and had to decide whether to go savory (like a chipotle "cheese" sauce) or sweet. I had just brought home a lot of strawberries from @unsqgreenmarket so into the blender they went! Since I had added 1/2 lime juice to the prior, I estimated a heaping cup of chopped strawberries (maybe a few more), 1/4 cup virgin coconut oil, 1 tsp vanilla, 1/3 cup maple syrup and 2 tsp xantham gum (added once all the rest had been puréed until creamy (I skipped the avocado as was concerned about the color). Spelt crust. Freeze. Topped it off with some @anitasyogurt coconut yogurt I gently sweetened and some strawberries I roasted with a syrupy balsamic vinegar (and a little sweet pea shoot, because?). ? Strawberry Mousse Pie Filling
Ingredients:
1 cup soaked cashews
1 heaping cup of chopped strawberries (maybe a few more)
1/4 cup virgin coconut oil
1 tsp vanilla
1/3 cup maple syrup
2 tsp xantham gum (added once all the rest had been puréed until creamy
Directions:
Blend all ingredients together in a food processor until smooth and creamy. Pout into prefered pie shell & Freeze.
Serve with coconut yogurt & roasted strawberries with a syrupy balsamic vinegar.
