Prepping overnight oats makes getting up early for a long ride a lot easier, and this bowl sounds like the perfect addition to our rotation - I love the use of now-in-season strawberries along with pantry staples.
Recipe:
(Serves 2)
1 cup gluten free rolled oats,
1 1/4 cup fresh almond milk,
1 Tbs chia seeds,
1 Tbs coconut (palm) sugar,
dash of vanilla,
dash of cinnamon.
Mix all together in a glass bowl or jar with lid. Cover and refrigerate overnight. Top with your favorite dried or fresh fruits, seeds and nuts (or chocolate chips)
