Strawberry Mango Parfait

Bottom layer: 4 tbs soy yogurt
Middle layer: 4 tbs strawberry ginger compote (recipe below; makes multiple servings)
200g strawberries, halved
1 knob of ginger, finely chopped
1/2 tsp vanilla
1-2 tbs agave
a splash of water
1/2 tsp cornstarch mixed with 1 tbs of cold water
1. Add the strawberries, ginger, vanilla. agave and water into a saucepan and cook over medium low heat until the strawberries have softened.
2. Stir in the cornstarch mixture and let the compote come to a boil, let it bubble for a minute or so. Pour into a sealable jar and store in the fridge.
top layer: mango cream
a large handful of frozen mango
oat milk as desired
a dash of vanilla
Top layer: Mango Nicecream
handful of frozen mango chunks
splash of oat milk
1. Add the frozen mango chunks into a blender and add splashes of oat milk until it reaches a creamy yet not liquid consistency. It depends on your blender how much oat milk you will have to add.
Garnish: granola of your choice, strawberries
