- 1 large egg
- 4 ounces milk
- 2 tablespoons olive oil
- 5 1/ 2 ounces oat flour
- 2 tablespoons granulated sugar
- 1/ 2 teaspoon baking powder
- 1/ 4 teaspoon Kosher salt
In a large bowl, add the oat flour, sugar, baking powder and salt.
Whisk in the oil, then add the milk and mix until combined.
Heat a large frying pan over a medium heat. Add a little butter (or spray oil) each time you put a new batch on.
Add 1/5 of the batter to the pan and cook until bubbles form on the top. Flip and cook for a further minute.
Serve and top with whipped cream and fresh fruit
