A hearty, cold weather salad when greens are just not enough.

2 cup wild rice, cooked and cooled
2 cup brussels sprouts, thinly sliced
1 cup celery, chopped
1 cup radishes, thinly sliced
4 green onions, sliced
1 cup peas
1 cup frozen shelled edamame, thawed
4 tbsp olive oil
1.5 tbsp dijon mustard
2 tbsp lemon juice
1 tsp agave nectar or maple syrup
Generous amount black pepper
Pinch of salt
Cook rice and allow to cool (or rinse with cold water for quicker cooling!). Add to large bowl along will chopped veggies. Put dressing ingredients in a small bowl or mason jar and whisk/shake to combine. Toss everything together and top with pumpkin seeds, pine nuts or sesame seeds for crunch! Delish cold or gently warmed!
