Veggie Sushi With Almond Dipping Sauce
Ingredients
Nori sheets
2.5 cups brown rice mixed with 1tbsp vinegar
Purple cabbage, cut into strips
Carrots, cut into strips
Lettuce, cut into small pieces
Sesame seeds, to sprinkle
Dipping sauce:
1/4 cup almond butter
1 tbsp coconut aminos
1 tbsp agave nectar
2tbsp water (omit if the almond butter is runny)
Procedure:
Lay the nori sheet on a cutting board or a sushi roller then spread a layer of brown rice but leave about a inch or so at the end so that the filling doesn't spill
Add the veggies
Roll the sushi tightly
Slice with a sharp knife
Sauce:
Blend all the ingredients in a vitamix or by hand
