Pork, Good For A Crowd
4 oz Proscuitto
2 crisp apples
1/2 lemon
6 oz manchego
several handfuls arugula
olive oil & black pepper

Cut or tear prosciutto into inch-thick long strips.
Thinly slice apples and toss in a bowl with 1/4 cup of water and juice of 1/2 lemon to keep them from browning, then drain apples from citrus water.
Slice cheese into thin strips roughly the same length as the apple slices.
Pile an apple slice with a piece of cheese and a few sprigs of arugula, then wrap with a thin strip of prosciutto and repeat until you've used up all your apple slices - then maybe slice more apples if you have extra prosciutto and cheese!

Serve with a drizzle of olive oil and a few cracks of black pepper!
