If the idea of making your own dough seems a bit daunting, not a problem! Most pizzerias sell their own dough in 1 lb balls making homemade pizza night a bit easier to manage!

For the Dough

ingredients

  • 1 cup plus one tablespoon 00 flour
  • 1 cup plus 1 tablespoon and 2 teaspoons all purpose flour
  • 1 teaspoon fine sea salt
  • 3/4 teaspoon active dry yeast
  • 1 teaspoon extra virgin olive oil

For the Sausage Pizza

ingredients

  • 1 pound fresh mozzarella, cut into 1/4-inch slices
  • 1/2 cup pizza sauce, homemade or store bought
  • 1 pound sweet Italian sausage
  • 1/4 cup grated Parmesan cheese
  • Olive oil, as needed
  • Crushed red pepper flakes, as needed
  • Basil leaves, for garnish

For the Pizza Dough

Method

  • Step 1

    In a large mixing bowl, combine flours and salt.

  • Step 2

    In a small mixing bowl, stir together a little less than 1 cup lukewarm tap water, the yeast and the olive oil, then pour it into flour mixture.

  • Step 3

    Knead with your hands until well combined, approximately 3 minutes, then let the mixture rest for 15 minutes.

  • Step 4

    Knead rested dough for 3 minutes. Cut into 2 equal pieces and shape each into a ball.

  • Step 5

    Place on a heavily floured surface, cover with dampened cloth, and let rest and rise for 3 to 4 hours at room temperature or for 8 to 24 hours in the refrigerator. (If you refrigerate the dough, remove it 30 to 45 minutes before you begin to shape it for pizza.)

For the Sausage Pizza.

  • Step 1

    Preheat oven to 500°F. If dough was in the refrigerator, remove and bring to room temperature before shaping. Add a generous amount of olive oil to a sheet pan and set aside.

  • Step 2

    In a large skillet on medium high heat, add sausage and cook until golden brown and crispy, 10-12 minutes. Drain into a colander and reserve.

  • Step 3

    Next, roll out the pizza dough. Place each dough ball on a heavily floured surface and use your fingers to stretch it, then transfer to the sheet pan and continue to stretch and push the dough out into the corners of the pan.

  • Step 4

    Once the dough is stretched, top with sauce, mozzarella cheese and sausage. Sprinkle Parmesan cheese, more olive oil and red pepper flakes.

  • Step 5

    Bake in the oven until golden brown and crisp around the edges, 8-10 minutes.

  • Step 6

    Remove from the oven and top with basil leaves. Enjoy!
