ingredients
- 1 cherry tomatoes
- 1 potato, cubed
- 1 sliced onion
- 3 stems tenderstem broccoli
- 1 clove finely sliced garlic
- 2 handfuls of spinach
- 1 pack mushrooms, quartered
- 1 ball mozzarella
- 1 tsp dried basil
- 5 beaten eggs
- Salt
- Pepper
Method
Step 1
Heat oil in a large pan add the onion, potato and garlic and cook for 15 minutes.
Step 2
Turn the grill on high.
Step 3
Add the tomatoes, broccoli, mushrooms, and seasoning. Cook for a further 10 minutes until tomatoes are soft.
Step 4
Stir in the spinach, once wilted add the beaten eggs.
Step 5
Place the pan under the grill for 5 minutes.
