ingredients

  • 1 cherry tomatoes
  • 1 potato, cubed
  • 1 sliced onion
  • 3 stems tenderstem broccoli
  • 1 clove finely sliced garlic
  • 2 handfuls of spinach
  • 1 pack mushrooms, quartered
  • 1 ball mozzarella
  • 1 tsp dried basil
  • 5 beaten eggs
  • Salt
  • Pepper

Method

  • Step 1

    Heat oil in a large pan add the onion, potato and garlic and cook for 15 minutes.

  • Step 2

    Turn the grill on high.

  • Step 3

    Add the tomatoes, broccoli, mushrooms, and seasoning. Cook for a further 10 minutes until tomatoes are soft.

  • Step 4

    Stir in the spinach, once wilted add the beaten eggs.

  • Step 5

    Place the pan under the grill for 5 minutes.
