ingredients
- 1/2 cup orange juice
- 1/4 cup orange powder
- 1 tablespoons orange zest
- 1/2 cup vegan buttermilk
- 1 cup vegan sugar
- 3 flax eggs
- 1 3/4 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 2/3 cup extra virgin olive oil
- 4 cups confectioner sugar
- 1 cup butter, softened
- 2 teaspoons vanilla extract
- 3 tablespoons plant based milk
- pinch of salt
Method
Step 1
Preheat oven to 350F. grease and line two 6 inch cake pans. in a large mixing bowl, add sugar, orange powder & zest, and rosemary then mix
Step 2
Add orange juice to vegan buttermilk and stir. add to sugar mixture then mix. add flour and combine then add olive oil, mixing until a smooth batter forms.
Step 3
Pour into prepared cake pans and bake for 50-55 minutes or until a toothpick can be inserted and come out clean. let cool completely.
Step 4
Frosting — using a standing mixer with a paddle attachment, cream vegan butter. add confectioner sugar 1 cup at a time until all incorporated. on a low mixing speed, add vanilla extract, plant based milk, and salt. turn up to a medium speed and mix until smooth.
Step 5
Decorate cake as desired then serve.
