- Handful spinach
- Avocado oil, or butter, for sautéing
- 1 fillet salmon
- 1 slice bread, toasted
- 1/ 2 avocado, smashed
- Dill, To Taste
- Sea salt and black pepper
Spread avocado on toast. Set aside.
Heat oil in a skillet over medium. Sauté spinach until wilted, then season with salt and pepper. Transfer to toast, on top of avocado.
Wipe out pan and add salmon, cooking over medium. Season with salt and pepper, pan searing until cooked through, about 3 minutes per side on a small fillet. Remove from heat and place on top of spinach.
Garnish with dill, salt and pepper.
