Makes 2 Pizza Crusts


INGREDIENTS
125 grams chickpea flour
75 grams buckwheat flour
60 grams oat flour
25 grams psyllium husk powder
1 teaspoon Himalayan salt
1 tablespoon curry madras spices
1/2 teaspoon nigella seeds
300 ml water


DIRECTIONS
Combine all dry ingredients in a large bowl. Add the water using a silicone spoon spatula. Keep stirring until it becomes a dough. This takes about 1 minute. Let stand for 5 minutes.

Meanwhile, heat two non-stick dry frying pans (28 cm diameter) over medium heat. I have an induction cooktop and set the control to '5'. Add a knob of aroma free coconut oil to the pans and distribute evenly. Place the silicone spoon spatula in a bowl of water near the batter. Scoop up half of the dough with the wet spoon and spread it evenly in the pan. Repeat with the remaining dough. Keep wetting the spoon if needed. It makes it easier to go through the dough. You can also put your hand in the water, use your flat palm and press the dough around the pan. Turn up the heat, induction '7', and cook for 3-4 minutes. Flip and repeat until light golden.

Preheat the oven at 220 ℃. Top the pizza with your favorite toppings and put in the oven for about 10 minutes. Slice and serve!
