ingredients

  • 8 ounces fresh Shrimp
  • 1 cup leftover rice
  • 2 tbsp avocado oil
  • 3 tbsp soy sauce
  • 1/2 tsp black pepper
  • 2 tsp garlic paste
  • 2 tsp ginger paste
  • 2 beaten eggs
  • 1/2 cup canned corn
  • 1 packet dashi stock
  • A dash of white pepper
  • salt, to taste.

Method

  • Step 1

    Season shrimp with salt and black pepper.

  • Step 2

    Heat large skillet to medium-high heat. Add 1 tbsp of oil and cook shrimp for 1 minute on each side. Do not fully cook. Remove shrimp and set aside on a plate.

  • Step 3

    Stir in garlic, ginger, and dashi stock and cook for 1 minute. Then add carrots, peas, and corn and cook for 2 minutes.

  • Step 4

    Move veggies to one side of the pan, then add beaten eggs to the other. Stir and scramble.

  • Step 5

    Add the shrimp and rice then top with soy sauce. Add a dash of white pepper and cook until shrimp are fully cooked through.

  • Step 6

    Top with chopped scallions and serve.
