Pineapple Fruit Salad Tartine

Vegan cashew-almond cream cheese pineapple rounds. My little girl wanted some pineapple slices for her World Cup-watching snack yesterday so I added some good fat with this cashew-almond cream cheese. -@cookingforpeanuts

Add ingredients directly to your favorite online grocery cart (where available).
- For the vegan cream cheese
- 1/2 cup almonds, slivered and blanched
- 3/4 cup cashews, soaked overnight
- 1/2 cup non-dairy yogurt
- 2 tbsp lemon juice
- 11/2 tsp apple cider vinegar
- salt to taste
- 4 pineapple, in rounds
- 1 cup strawberries
- 1 kiwi
- 1/4 cup raspberries
- 1/4 cup cherries
Blend in high-speed blender, all the ingredients for the vegan Cream Cheese.
Spread vegan cream cheese on pineapple rounds, top with choice of fruit. (In photo, Cherries, raspberries, kiwi and strawberries).
