Pineapple Fruit Salad Tartine
"Vegan cashew-almond cream cheese pineapple rounds. My little girl wanted some pineapple slices for her World Cup-watching snack yesterday so I added some good fat with this cashew-almond cream cheese."

- For the vegan cream cheese
- 1/ 2 cup almonds, slivered and blanched
- 3/ 4 cup cashews, soaked overnight
- 1/ 2 cup non-dairy yogurt
- 2 tablespoon lemon juice
- 1 1/ 2 teaspoon apple cider vinegar
- salt to taste
- 4 pineapple, in rounds
- 1 cup strawberries
- 1 kiwi
- 1/ 4 cup raspberries
- 1/ 4 cup cherries
Blend in high-speed blender, all the ingredients for the vegan Cream Cheese.
Spread vegan cream cheese on pineapple rounds, top with choice of fruit. (In photo, Cherries, raspberries, kiwi and strawberries).
