ingredients
- FOR CHICKEN:
- 4 chicken breasts (about 2 lbs), cut into bite sized pieces
- 2 tablespoon ghee (or olive oil)
- 1 cup orange hoisin sauce (see below)
- 2 broccoli crowns, cut into small florets
- 2 green onions, thinly sliced
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon sesame seeds
- ORANGE HOISIN SAUCE:
- 2 tablespoon whole30 compliant almond butter
- zest and flesh of 1 peeled orange
- 2 cloves garlic
- 1/2 inch peeled ginger
- 1 teaspoon apple cider vinegar
- 1 tablespoon tomato paste
- 3 -4 dates
- 1/2 cup coconut aminos
- 1/2 teaspoon Chinese five spice seasoning
- 2 teaspoon sesame oil
- 1/2 teaspoon chili powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
Method
Step 1
FOR CHICKEN: Add the ghee (or olive oil) to a large skillet over high heat, and add chicken. Allow to cook, stirring occasionally, for about 5 minutes or until mostly cooked through. Add the sauce to the pan and bring to a simmer, and allow the chicken to cook in the sauce for another 3-4 minutes, stirring occasionally. Season to taste with salt and pepper. In a separate skillet, steam the broccoli over medium heat for 5-6 minutes or until bright green. Be careful not to overcook it. Serve the chicken with the broccoli and top with green onions and sesame seeds.
Step 2
ORANGE HOISIN SAUCE: Add all the ingredients to a medium sauce pan and bring to a boil. Lower the heat and allow to simmer for about five minutes, then pour into your blender or food processor. Blend on high until smooth (strain if necessary).
