Salad Base
- kale
- arugula
- 1/2 cup quinoa
- 1 cup veggie stock
- edamame
- peas
- avocado
- 2 teaspoons barley powder
ingredients
Dressing
- 1/2 cup vegan mayo
- 1 teaspoon wasabi
- 1 lemon, juiced
- 1/2 teaspoon maple syrup
- salt and pepper, to taste
Method
Step 1
Start by cooking your quinoa according to package instructions. Subbing water for veggie stock and adding the barley into the pot. Once cooked. Set aside and fluff before serving.
Step 2
Combine all the dressing ingredients into a bowl and whisk until thoroughly combined.
Step 3
To assemble, add your quinoa, kale, arugula, peas, edamame and avocado into a bowl and serve with that punchy wasabi dressing.
