"Keralan coconut curry - a light, flavourful and versatile curry. You can add many different vegetables like sweet potatoes, chickpeas, spinach, aubergines, okra, broccoli, mushrooms, green beans etc. Here I have used pumpkin, Delhi carrots, broccoli, white button mushrooms, swiss chard and chana dal (split chick peas). The curry is made from coconut oil, mustard seeds, chopped onion, whole chillies, chopped ginger and garlic, chopped tomatoes, salt, ground turmeric, coriander & cumin, creamy coconut milk, garam masala, tamarind paste and lots of freshly ground pepper."
