ingredients
- 50 grams Dried tomato
- 5 tablepoons Olive oil
- 2 tablepoons Parmesan
- 150 grams Pasta
- 1 piece Zucchini
- 1 handfu Pine nuts
- To Taste Basil
Method
Step 1
For the red pesto : blend the dried tomatoes, olive oil (use the one from the tomatoes) and parmesan cheese until it's creamy.
Step 2
Cut your zucchini in slices and fried them in a pan with some olive oil until they are cooked. In the meantime cook your pasta according to the instructions.
Step 3
When your pasta are cooked add them to the pan where are the zucchini, add the pesto and two tablespoon of the water from your cooked pasta. Mix everything together until it's fully incorporated.
Step 4
Serve with some toasted pine nuts, fresh basil and parmesan and enjoy !
Step 5
For a vegan version twist the parmesan cheese for some nutritional yeast !
