"Kitchari is a traditional meal in the Ayurveda medicine. Composed of basmati rice and mung dal, it has as many variations as possible, here I made it with lentils instead of mung dal, but you can make it in the traditional way if wanted. It is a quick and easy meal to prepare but also a really digest one."

ingredients
- 200 grams Basmati rice
- 200 grams Lentils
- 1 piece Fresh ginger
- 1 tablespoon Oil
- 1 tablespoon Cumin seeds
- 1 tablespoon Fennel seeds
- 1 tablespoon Coriander seeds
- 1/2 tablespoon Turmeric
- 1 tablespoon Salt
- 5 cups Water
- 4 pieces Carrots
- 4 handfuls of Spinach
Method
Step 1
Heat a medium pan with some oil and add your grounded spices and cooked them until they are golden.
Step 2
Add the ginger, chopped carrots, rice and lentils. Cooked them again for 2-3 minutes. Add water and bring it to a boil, then cover and reduce to lower heat for about 25-30 minutes or until it's everything is cooked. Add some salt if needed and fresh cilantro on top.
