Summer produce is in full swing with these jammy oat bars! Chock full of fresh berries, they're topped off with a crumbly, sweet streusel topping, making them perfect for breakfast or dessert.

ingredients
- 1 3/4 cups rolled oats
- 1 1/4 cups almond flour
- 1/3 cup almond butter
- 2 tablespoons plus 2 1/2 teaspoons maple syrup
- 3 tablespoons unsweetened applesauce
- 4 1/4 cups coconut oil
- 1 pinch salt
- 3 cups berries, of choice
- 1 tablespoon chia seeds
- 1 tablespoon tapioca starch
- 1 teaspoon baking soda
Method
Step 1
Preheat oven at 350ºF.
Step 2
In a pan put the berries of choice (here blueberries and strawberries) on medium heat with chia seeds and tapioca starch until it’s cooked and you get a purée. Let cool.
Step 3
Grind the oats into flour then add the almond flour, salt, oil, almond butter, baking soda and maple syrup. Combine everything together until you get a kind of crumble dough.
Step 4
In a pan covered with baking paper, put half of your crumble dough and flatten it to get a base for your bars. Then add the berry purée and finally add the rest of crumble dough on top (try to keep some big pieces like for a crumble).
Step 5
Cook for about 20-25 minutes and then let it cool for 1 hour and cut it into bars.
