ingredients
- 1 1/2 cups Graham cracker crumbs
- 1/3 cup shredded coconut
- 6 tablespoons melted butter
- 1 can (14oz) sweetened condensed milk
- 3/4 cup heavy cream
- 1/2 cup plain yogurt
- Zest of 1 lemon
- Juice of 2-3 lemons
Method
Step 1
Mix together graham cracker crumbs, coconut, and melted butter. Press the mixture into a greased and lined 8x8 in. pan. Bake at 350°F for 10 minutes.
Step 2
Meanwhile, whisk together sweetened condensed milk, heavy cream, yogurt, lemon juice and zest.
Step 3
Pour filling over the cooled crust. Chill for at least 6 hrs to overnight.
Step 4
To make the meringue: In a stand mixer with the whisk attachment, whip the egg whites on medium speed, until foamy, about 2 minutes. Add in the lemon juice and salt.
Step 5
Increase the speed to medium-high and add the sugar 1 tsp at a time, until the meringue expands in size, is glossy, and has stiff peaks.
Step 6
Pipe the meringue on top of the bars and enjoy!
