French Onion Soup

ingredients
- 3 large onions, sliced
- 6 cups beef stock
- 5 tablespoons butter
- 1 tablespoon flour
- 1 cup white wine
- 2 sprigs thyme
- Salt and pepper
- Bread slices, toasted
- Gruyère cheese
- Parlsey, for garnish
Method
Step 1
In a bowl over medium heat, melt the butter and add in the sliced onions. Caramelize the onions until they’re golden brown. This should take around 50 mins, turn down heat if needed to prevent burning.
Step 2
While the onions are caramelizing, pour your stock into a separate pot and heat it up to temperature.
Step 3
Back to the caramelized onions, pour in the white wine and deglaze your pot. Reduce for a few minutes. Add in the flour and thyme, stir through for another 2-3 minutes.
Step 4
Slowly pour in the warm beef stock and bring to a boil for 10-15 minutes. Salt and pepper to taste.
Step 5
Divide the soup mixture into ramekins, top with grated cheese, a slice of toasted bread and another layer of grated cheese. Broil until the cheese is melted and slightly golden. Top with parsley.
