Makes 10-12 pancakes

Ingredients:

2 cups old fashioned oats

1 banana

½ cup plain Greek yogurt

2 large eggs

1 cup blueberries (divided)

1 cup almond milk

2 tsp baking powder

Zest of half lemon

½ tsp salt

Mint (optional)

 

Directions:

Add all of your ingredients except a ½ cup of blueberries to a high speed blender. Begin to mix on low speed and increase to medium speed until all of the contents are mixed well.

Now add ½ cup of blueberries to the batter and fold it in with a spoon. Set to the side and allow the batter to thicken.

Heat a skillet on medium heat and spray with a oil. Pour ¼ cup of batter into the pan at a time. Cook for about 2 minutes on each side or until you start to see bubbles then flip and cook for 1 minute. Continue to cook until all the batter is used.

Top with mint and maple syrup, enjoy!
