Apple Pie Cinnamon Pancakes

Vegan Apple Pie Pancakes
Ingredients:
1 cup Simple Mills pancake mix
1 cup almond milk
1/2 scoop MRM Veggie Cinnamon Bun protein
1 tsp vanilla extract
3 tsp coconut oil
2 tsp cinnamon
1 gala apple
Directions:
1) Heat up medium skillet and add 1 tsp coconut oil. Peel and cut apple into 1/2" wedges. Once the skillet is hot add apples and 1 tsp of cinnamon and cook for 8-10 minutes, until apple starts to soften. Remove from heat and set aside.
2) Heat a large skillet to medium heat and spray with nonstick spray. In a large mixing bowl add pancake mix, milk, protein powder, vanilla extract, 2 tsp coconut oil, and 1 tsp cinnamon. Whisk well.
3) Once pan is hot add about 1/4 cup of mix for reach pancake. Cook for about 2-3 minutes on each side. Once you have cooked all of your pancakes top with your cinnamon apples and a warm syrup of your choice. Enjoy!
