For the filling:
- 1 (15 ounce) can black beans, drained and rinsed
- 1/2 cup corn
- 1 cup diced bell pepper
- 1/2 cup diced onion
- 2 garlic cloves, minced
- 1 teaspoon avocado oil
- 1 tablespoon taco seasoning
- 1/4 cup salsa (or fire-roasted tomatoes)
- Kosher salt, to taste

- 4 medium (or 6 small) flour or corn tortillas
- 1/2 cup dairy-free shredded cheese (optional)
- Cooking spray or oil, for brushing

Method
Step 1
Preheat oven to 400°F. Lightly grease or line a baking sheet with parchment paper.

Heat oil in a skillet over medium heat.

Add diced onion and bell pepper, sautéing for 3–4 minutes until softened.

Stir in garlic, taco seasoning, and black beans. Mix well.

Add salsa and salt, cooking for another 2–3 minutes until heated through.

Place ¼ to ⅓ cup of filling on one side of each medium tortilla.

Sprinkle with dairy-free cheese if using.

Fold over and gently press down. (For small tortillas, use about 2–3 tablespoons filling per taco.)
