These are a spin on the croquette, filled with Annie's Mac and Cheese. They are crispy on the outside and creamy on the inside, making them a delicious snack or appetizer. Serve them with a salad for a light lunch or a fun party snack. They can also be enjoyed on their own or dipped in marinara or ranch.

- 1 box Annie’s Classic Cheddar Macaroni and Cheese
- 1/2 cup cooked ham, diced
- 1/4 cup milk
- 4 tablespoons salted butter
- 1 cup shredded cheddar cheese
- 2 large eggs, beaten with 1/4 cup of milk
- 1 cup Annie’s Organic Extra Cheesy Cheddar Bunnies, finely crushed
- 1 cup Annie’s Organic White Cheddar Bunnies, finely crushed
Method
Step 1
Bring a large pot of salted water to a boil.
Step 2
Add the pasta from the box and cook for 5 minutes, stirring frequently to prevent sticking.
Step 3
Drain the pasta and set aside.
Step 4
Add the diced ham to the pot and cook for 2 minutes, or until slightly crispy.
Step 5
Add the milk, salted butter, and the cheese packet from the box. Mix until the butter melts and the cheese is dissolved.
Step 6
Return the cooked macaroni to the pot and stir to combine.
Step 7
Mix in the shredded cheddar cheese and set aside.
Step 8
Pour the macaroni and cheese mixture onto a medium baking pan lined with parchment paper, spreading it out evenly.
Step 9
Place the pan in the freezer for 2 hours, or until the mixture has hardened.
Step 10
Preheat the oven to 400°F.
Step 11
Remove the parchment paper from the pan and use a large knife to slice through the block and create rectangle croquettes.
Step 12
Dip each croquette into the egg/milk mixture and coat in the Annie’s Cheddar Bunnies mixture.

Place each croquette on a parchment paper-lined baking sheet and bake for 25 minutes, or until golden brown.

Remove from the oven and let cool before serving.
