This recipe is featured in our 2021 Holiday Cookie Roundup! If you’re looking to make a delicious treat but want to go the no-bake route, these are for you. This cookie dough comes together in a food processor with wholesome oats, dates, and salty almond butter. And feel free to stir your favorite chocolate chips into the dough or drizzle melted chocolate on top.

ingredients

  • 1 1/2 cup almonds
  • 1/2 cup gluten free rolled oats
  • 1 cup dates, pitted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon sea salt

Method

  • Step 1

    In a food processor, blend all ingredients until a thick dough that clumps together forms. Do not over process the dough. The texture has to stay slightly crunchy and you should see small pieces of almonds and oats.

  • Step 2

    Roll dough into 18-20 balls and arrange on a baking sheet lined with parchment paper. Flatten into cookies and use a fork to make criss-cross lines on the top of each cookie.

  • Step 3

    Sprinkle with sea salt. Store in the fridge for up to two weeks.
