This cookie dough comes together in a food processor with wholesome oats, dates, and salty almond butter. And feel free to stir your favorite chocolate chips into the dough or drizzle melted chocolate on top.

- 1 1/2 cup almonds
- 1/2 cup gluten free rolled oats
- 1 cup dates, pitted
- 1 teaspoon vanilla extract
- 1/2 teaspoon sea salt
Method
Step 1
In a food processor, blend all ingredients until a thick dough that clumps together forms. Do not over process the dough. The texture has to stay slightly crunchy and you should see small pieces of almonds and oats.
Step 2
Roll dough into 18-20 balls and arrange on a baking sheet lined with parchment paper. Flatten into cookies and use a fork to make criss-cross lines on the top of each cookie.
Step 3
Sprinkle with sea salt. Store in the fridge for up to two weeks.
