Honey Carrot Cake

"Carrot cake is one of my favorite cakes ever. There are a lot of recipes on web about it, but I really do like using honeycomb instead of sugar and adding some extra spice on it, like ginger powder, clove powder and cardamom. I really love the combination of carrot with ginger, they “meet” together and sparkles appear."

ingredients

  • 1 teaspoon ginger powder
  • 1/3 teaspoon clove powder
  • 1/2 teaspoon Cardamom powder

Method

  • Step 1

    Preheat oven at 350 ° F (180° C). Grease a baking pan with some butter and sprinkle some flour. In a large bowl mix all the dry ingredients. In another bowl whisk together oil, honey and eggs until everything is well incorporated.

  • Step 2

    Start adding the dry ingredients little by little and stir until everything is combined. At last add grated carrot and walnuts. Give it a last mix. Bake for 30-35 minutes at 350° F. Once the cake is baked, let it cool and prepare the creme cheese frosting.

  • Step 3

    For the frosting: Whisk butter until fluffy, add cream cheese and honey and continue mixing until you get a thick creamy texture. Cut the cake into 2 discs and decorate it the prepared cream cheese frosting and some walnuts.
