How perfect are these individual apple pies? Plus so quick & easy to make!

Yield: Serves or Makes 8
Preheat the oven to 425˚F and line a baking sheet with parchment paper. In a small saucepan combine apple juice, cornstarch, sugar, cinnamon and vanilla. Bring to boil then reduce to a simmer and cook until thickened, stirring constantly. Add apples, remove from heat and set aside.
Lay puff pastry out on prepare baking sheet and cut into 8 even squares. Brush the edges with plant-based milk then add 1-2 tablespoons of the apple filling to the center. Fold the squares in half to create a hand pie and seal the edges with the tines of a fork. Slice three slashes across the top of each pie, brush with more milk and sprinkle with raw cane sugar.
Bake for 10-15 minutes or until golden brown.
