ingredients

  • 1/2 cup apple juice
  • 1 tablespoon cornstarch
  • 1 tablespoon raw cane sugar, plus more for sprinkling
  • 1 teaspoon cinnamon
  • splash of vanilla extract
  • 1 sheet vegan puff pastry
  • plant-based milk, as needed
  • 2 cubed apples

Method

  • Step 1

    Preheat the oven to 425˚F and line a baking sheet with parchment paper.

  • Step 2

    In a small saucepan combine apple juice, cornstarch, sugar, cinnamon and vanilla. Bring to boil then reduce to a simmer and cook until thickened, stirring constantly. Add apples, remove from heat and set aside.

  • Step 3

    Lay puff pastry out on prepare baking sheet and cut into 8 even squares. Brush the edges with plant-based milk then add 1-2 tablespoons of the apple filling to the center.

  • Step 4

    Fold the squares in half to create a hand pie and seal the edges with the tines of a fork. Slice three slashes across the top of each pie, brush with more milk and sprinkle with raw cane sugar.

  • Step 5

    Bake for 10-15 minutes or until golden brown.
