Spiced Banana Amaro Bourbon Cocktail

"“…in the darkness there must come out to light.” - Bob Marley. Figured we’d change it up from the previous dark shot to light with this amazing little concoction using the spiced banana syrup I made recently. @cocktailexplorer posted a great shot of an Amaro Sour (@btparsons) which immediately peaked my interest because I love NY sours, whisky, riffs on classics, amaro, experimenting…well, you get the point. Anywho, you’re gonna wanna make this one friends… . 1.5 oz amaro (I had Amaro di Toscana on hand, wanted something with bite) 3/4 oz bourbon 1/2 oz lemon juice 3/4 oz spiced banana syrup @scrappysbitters chocolate bitters 1 egg white Dry shake all ingredients, add ice, shake again and fine strain. . Banana syrup: (took @colljeffers recipe and tweaked) 1 sliced banana, 3-4 all spice, 1 tsp vanilla extract, some fresh grated nutmeg, 1 cup water and 1 cup demarara sugar in a saucepan on medium heat, stirring often until the sugar has fully dissolved. Let cool, fine strain through a sieve or cheesecloth into an air tight bottle, refrigerate. . Would be interesting to try with different amari like Cynar, Lucano etc. You can skip the failed attempt at bitters art if you like…or not, and call it abstract art like I am. ? Cheers!"
