"So far, we’ve just been talking about LEAN DOUGHS during #YallRise. Lean Doughs are those simple doughs normally made with just 4 ingredients; FLOUR, SALT, YEAST & WATER, & they contain little to no fat or sugar. Think pita bread, pizza dough, basic white bread, etc. But today I want to shift gears & focus on RICH DOUGHS aka ENRICHED DOUGHS. Rich doughs have all of the usual suspects as lean doughs but they are enriched with fats like milk, butter or eggs. The fats tenderize the dough which shortens the gluten strands, giving them a softer, more billowy texture. Think things like cinnamon rolls, brioche, challah or dinner rolls. These Lemon Herb Dinner Rolls are enriched with both milk and butter plus they have a bit of sugar and honey to sweeten the deal. They are the fluffiest little butter clouds & burst with bright lemon zest & herby freshness & a sprinkle of delicately crunchy of sea salt flakes. If you don’t have herbs or lemon lying around, feel free to top them with sesame seeds, poppy seeds, everything bagel seasoning, S&P or just plain butter. They are an airy delight, any way you top them and the perfect side to a springtime meal. The dinner rolls are super easy to make and pretty fun to roll out and watch them rise. If you’ve never made homemade rolls, this is such a fun place to start!"
