  • 2/3 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/2 cup unsweetened chocolate (1.5oz), melted
  • 1/2 cup sugar
  • 1/4 cup canola oil
  • 1/2 teaspoon vanilla extract
  • 1 large egg
  • 1/4 cup hot coffee
  • 1/3 cup walnuts (can substitute with other nuts, sprinkles, candy, etc.), chopped

Method

Chocolate Fudge Cake

  • Step 1

    Preheat oven to 350ºF and line a 6-inch pan (2 inches high) with butter and parchment paper.

  • Step 2

    Whisk together the flour, cocoa, baking soda, baking powder, and salt.

  • Step 3

    In a separate bowl, using a whisk or hand mixer, whisk together the chocolate, sugar, oil, vanilla, and the egg.

  • Step 4

    Add the dry ingredients to the chocolate mixture and mix until just combined

  • Step 5

    Pour in the coffee, continually stirring, and mix 30 seconds longer (to incorporate air into the batter).

  • Step 6

    Bake for 22-26 minutes, or until a toothpick comes out clean. Allow to cool in the pan for 10 minutes before inverting it onto a wire rack to finish cooling.

  • 1/2 cup semisweet chocolate, melted and cooled
  • 1/2 cup (1 stick) butter, softened
  • 1 1/2 cups powdered sugar
  • 2 tablespoons cocoa powder
  • 1 teaspoon vanilla extract
  • 1 tablespoon milk (plus more as needed)

for the fudge frosting

  • Step 1

    In the bowl of a stand mixer fitted with a paddle attachment or using a hand mixer, beat the butter until light and fluffy ( about 5 minutes), scraping down the sides as needed.

  • Step 2

    Add in the powdered sugar, cocoa, vanilla, and 1 tablespoon of milk, then continue to beat another 2 minutes.

  • Step 3

    Add in the melted chocolate and mix on low until incorporated, then increase speed to medium and beat until mixture is light and fluffy

For assembling the cake

  • Step 1

    Frost the cooled cake with the chocolate frosting, using a spoon to even out the top. Sprinkle with chopped walnuts and enjoy!
