ingredients
Pavlova
- 4 egg whites
- 1/4 teaspoon cream of tartar
- 1 cup granulated white sugar
ingredients
Cream and Topping
- 1 cup heavy whipping cream
- 1 tbsp powdered sugar
- pinch salt
- 1/2 teaspoon vanilla extract
- 1/4 cup raspberries, mashed
- Berries of your choice (I used raspberry, strawberry, and blueberry), for topping
- 1/4 cup dulce de leche, for topping
Method
Pavlova
Step 1
Preheat your oven to 350 degrees Fahrenheit.
Step 2
Add the egg white and cream of tartar to a stand mixer fitted with a whisk attachment.
Step 3
Whip on medium until foamy and then begin to gradually add in the granulated sugar. You can pour a steady stream of sugar while the mixer is running on low.
Step 4
Whip the meringue until stiff peaks form.
Step 5
Transfer the meringue to a parchment lined sheet tray and use a spoon to form a circular pavlova shape.
Step 6
Place the pavlova in the oven and immediately lower the temperature to 200 degrees Fahrenheit. Bake for 70-90 minutes or until the outside of the pavlova is firm, dry, and crisp, but the inside is still chewy.
Step 7
Let the pavlova sit in the oven after you turn it off to fully cool/dry out.
Cream and Topping
Step 1
Add the cream, powdered sugar, salt, and vanilla to a stand mixer and whip until soft peaks form.
Step 2
Add the mashed raspberries and continue to whip until stiff peaks form.
Step 3
Wash and prep your berries as needed.
Step 4
Scoop the raspberry whipped cream on top of the cooled pavlova and use a spoon to spread it and make swoops for decor. Organize your berries on top of the cream. Finally, drizzle the pavlova with dulce de leche for topping. Slice, serve, and enjoy!
