"Recipe for the Indian tacos
For the chickpea "tortillas":
It's basically a very simple chickpea crepe recipe. Whisk together 1 cup chickpea flour,1 cup water, 2 tbs olive oil, a pinch of baking soda, salt and pepper. Let it sit for 30 mins. Then make the tacos using 2 tablespoon of the mixture/each. Makes about 10 mini crepes.
For the chicken tikka masala:
I have a great curry base recipe. I posted it a couple weeks ago, when I made a sweet potato and black bean curry. I always make a big pot of this base, then freeze it in small portions. I used around 1 and a half cup of the curry base that I mixed with some chicken. I cooked the chicken breast on some @omgheebutter, seasoned with salt and pepper, then shredded it. Put the shredded chicken back to pot, add the base and cooked for a couple minutes.
For the cashew cream:
Soak 2 cups of raw cashews in 1 cup filtered water for at least 30 mins or overnight. Blend the cashews in a food processor with the water, juice of half lemon and some salt.
Drizzle the cashew cream over the tacos, sprinkle with cilantro. "
