ingredients
For the Churro Masa
- 100 grams (1/2 cup) butter
- 75 grams (3/8 cup brown sugar
- 250 grams (1 cup) water
- 200 grams (3/4 cup) flour
- 200 grams (3/4 cup) sourdough starter or discard
- 6 grams (1.25 teaspoons) salt
- 1 teaspoon vanilla
- 1 egg

For the Chocolate Sauce
- 200 grams (1 cup plus 2 tablespoons) dark chocolate
- 200 grams (1 cup plus 2 tablespoons) coconut milk or heavy cream
Method
Step 1
Combine the butter, water, vanilla and sugar into a sauce pan on medium heat. Let it heat up until it is almost boiling, while stirring.
Step 2
Once at a boiling point, remove from heat and add the flour and salt into the pan. Mix thoroughly until it turns into a cohesive dough. Let this mixture cool for 15 minutes.
Step 3
While the mixture is cooling, heat up a pan or pot of canola oil. You don't want it too hot. If you have a thermometer, between 350-375°F should be just fine.
Step 4
Put the masa into the bowl of a stand mixer and add the egg and sourdough starter. Use the paddle attachment to incorporate and mix until you have a smooth, thick batter. If you don't have a hand mixer, you can do this by hand, just make sure the mixture has cooled!
Step 5
If you have a piping bag, great. Add your masa into the piping bag, preferably with a star tip. If you don't have a piping bag, put your mixture into a ziplock back and cut the corner slightly. You don't want to cut too big or you'll end up with uncooked blobs.
Step 6
Once the oil is heated, pipe your churros into the oil about 4 at a time depending on your pot size. Use scissors or your hand to cut the dough into the oil.
Step 7
Fry the churros for 5-6 minutes, turning with tongs if needed to evenly cook them.
Step 8
Make your chocolate dipping sauce while your churros cook by putting the dark chocolate and coconut milk/heavy cream into a microwave safe bowl an heat up for 2-3 minutes. Stir with a whisk when you take it out and let it cool.
Step 9
Fill a bowl with a cinnamon sugar mixture. When the churros are done cooking, toss them in the cinnamon sugar mixture to coat them.
Step 10
Finally, dip your churros in chocolate. Enjoy!
