Inspired by my honeymoon in Portugal, I had to have more sardines in my life! This is a quick, easy, and tasty lunch I've added to my routine.

ingredients

  • 2 slices of gluten free bread
  • 1 clove garlic
  • 1 heirloom tomato, sliced
  • drizzle of olive oil
  • 1 can (3.75 oz) sardines
  • salt and pepper, to taste
  • parsley, chopped, for garnish

Method

  • Step 1

    Rub clove of garlic onto gluten free bread. Toast to desired doneness.

  • Step 2

    Top gluten free bread with tomatoes and drizzle with olive oil.

  • Step 3

    Place sardines on top of tomatoes and season with salt and pepper. Garnish with parsley.
