Rildok is a traditional Nepali soup found in the Himalayas. It is made by pounding potatoes by hand, until they are sticky and pliable enough to roll into balls, then cooking them in a spicy tomato-based broth.

ingredients

  • 4 medium red potatoes, boiled, peeled and mashed
  • 6 garlic cloves, mashed
  • 2 dried chilis, mashed
  • 1/2 tablespoon ground timur, or szechuan pepper
  • 1/2 cup diced tomatoes
  • 3 tablespoons vegetable oil
  • 1/4 cup diced red onion
  • 1 teaspoon ground turmeric
  • 2 cups water
  • Chopped scallions
  • Cilantro, for garnish
  • Green chilis, for garnish

Method

  • Step 1

    Using a mortar and pestle, pound the potatoes for 2-3 minutes till it’s stretchy. It should have a consistency similar to cheese pull. Dip your fingers in water and roll the potatoes in small balls, set aside.

  • Step 2

    In a deep pot heat oil over medium high heat. Add onions and cook for 2-3 minutes.

  • Step 3

    Add tomatoes, garlic, red chilies and timur or szechuan pepper. Cook until reduced to half.

  • Step 4

    Add water, scallions and let it simmer for 3-4 minutes. Drop the potato balls into the soup and cook for another 3-4 minutes.

  • Step 5

    Transfer to a serving bowl and garnish with cilantro and chilies. Enjoy!
