ingredients

  • 1 (5 ounce) can drained tuna in water
  • 2 tablespoons finely chopped cucumber
  • 1 tablespoon plain Greek yogurt
  • 1 tablespoon dried cranberries
  • 1/2 tablespoon Dijon mustard
  • 1/2 tablespoon spicy honey
  • cut into quarters Handful of grapes
  • 1 teaspoon Kosher salt
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon black pepper
  • 1 cored and sliced into thin discs large apple
  • 4 ounces thinly sliced sharp cheddar
  • 1 cup roughly chopped arugula

Method

  • Step 1

    In a large bowl, combine the tuna, cucumber, Greek yogurt, dried cranberries, mustard, grapes, salt, apple cider vinegar, and black pepper.

  • Step 2

    On each apple disc, place a couple of cheddar slices. Next, place on a small pile of chopped arugula. Finally, scoop the tuna mixture onto the apples. Enjoy!
