ingredients
- 1 (5 ounce) can drained tuna in water
- 2 tablespoons finely chopped cucumber
- 1 tablespoon plain Greek yogurt
- 1 tablespoon dried cranberries
- 1/2 tablespoon Dijon mustard
- 1/2 tablespoon spicy honey
- cut into quarters Handful of grapes
- 1 teaspoon Kosher salt
- 1 teaspoon apple cider vinegar
- 1/2 teaspoon black pepper
- 1 cored and sliced into thin discs large apple
- 4 ounces thinly sliced sharp cheddar
- 1 cup roughly chopped arugula
Method
Step 1
In a large bowl, combine the tuna, cucumber, Greek yogurt, dried cranberries, mustard, grapes, salt, apple cider vinegar, and black pepper.
Step 2
On each apple disc, place a couple of cheddar slices. Next, place on a small pile of chopped arugula. Finally, scoop the tuna mixture onto the apples. Enjoy!
