If you love lasagna and you love soup then you’re DEFINITELY going to love this! It’s a cheesy and meaty soup that’s packed with flavor and is definitely hearty enough to be a meal. Lasagna soups have been popular on social media for a while, and I’m so happy I finally tried it!

ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 white onion, finely diced
  • 2 teaspoons kosher salt, divided, plus more to taste
  • 4 cloves minced garlic
  • 1 pound ground beef
  • 1 teaspoon freshly cracked black pepper
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 teaspoon dried oregano
  • 2 tablespoons tomato paste
  • 2 cups marinara sauce
  • 3 cups chicken broth
  • 1/2 cup heavy cream
  • 1/2 box lasagna, broken into pieces
  • 1/2 cup freshly grated Parmesan
  • 1 cup fresh mozzarella
  • Large handful of fresh basil, finely chopped

Method

  • Step 1

    Heat olive oil in a large pot over medium high heat. Add in onion and 1 teaspoon kosher salt. Cook until soft and translucent, 7-10 minutes. Add in minced garlic and cook until fragrant, about 1 minute.

  • Step 2

    Add in the ground beef and season with 1 teaspoon kosher salt plus black pepper, red pepper flakes, and dried oregano. Cook until almost completely brown and no longer pink. Add in tomato paste, marinara sauce, chicken broth, and heavy cream, and bring to a boil.

  • Step 3

    Add in the lasagna pieces and allow to cook until Al dente. Add in the Parmesan, mozzarella, basil, and stir together. Serve and enjoy!
