  • 4 ounce feta block
  • 4 eggs
  • Kosher salt
  • Freshly ground black pepper
  • Crushed red pepper flakes
  • Tortillas
  • 1 avocado, sliced
  • Handful of cherry tomatoes, quartered
  • 1 green onion, finely sliced
  • Hot sauce, optional, for serving

Method

  • Step 1

    Preheat oven to 400F.

  • Step 2

    In a small baking dish, lay down the feta and crack in the eggs. Bake for about 15 minutes, or until the eggs are cooked through.

  • Step 3

    Remove from oven and season with salt, pepper, and red pepper flakes. Use a fork to mix the feta and eggs together until evenly combined. It should look like a creamy egg salad.

  • Step 4

    Lay down your tortillas. Fan sliced avocado on the bottom of each. Then spoon 3-4 large spoonfuls of the egg mixture. Top with the quartered tomatoes and sliced green onion, plus hot sauce. Roll up into little wraps. Enjoy!
