- 4 ounce feta block
- 4 eggs
- Kosher salt
- Freshly ground black pepper
- Crushed red pepper flakes
- Tortillas
- 1 avocado, sliced
- Handful of cherry tomatoes, quartered
- 1 green onion, finely sliced
- Hot sauce, optional, for serving
Method
Step 1
Preheat oven to 400F.
Step 2
In a small baking dish, lay down the feta and crack in the eggs. Bake for about 15 minutes, or until the eggs are cooked through.

Remove from oven and season with salt, pepper, and red pepper flakes. Use a fork to mix the feta and eggs together until evenly combined. It should look like a creamy egg salad.
