ingredients

  • 3/4 cups rye flour
  • 3 cups all purpose flour
  • 3 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 3/4 teaspoons ground cloves
  • 2 teaspoons fresh ground ginger
  • 3/4 cups melted butter, cooled
  • 1 2/3 cups white sugar
  • 4 egg whites
  • 2/3 cups black strap molasses

Method

  • Step 1

    Whisk dry ingredients together in a large bowl.

  • Step 2

    In mixer on medium speed with paddle attachment, combine sugar & egg whites. Add molasses with mixer running (pro-tip: spray the container you scale molasses into with nonstick spray). Scrape bowl before continuing.

  • Step 3

    Add egg whites gradually, scraping halfway through.

  • Step 4

    Switch to low speed. Add dry mixture all at once, just until no dough streaks are visible.

  • Step 5

    Chill for an hour before scooping. These bake best from frozen, on 350F for 12-15m depending on their size. Dip tops in raw sugar just before baking.
