This dish just only ten ingredients, making it a quick weeknight meal. Serve over rice that has been left over. Make an omelette or frittata bake with any leftovers in the morning.

Prep time 15mins
Cook time 30mins
Serves or Makes: 2

  • 1 large bunch broccoli rabe, roughly chopped
  • 4 pre-cooked chicken or pork sausages, sliced into pieces
  • 1 medium yellow onion, thinly sliced
  • 2 garlic cloves, smashed
  • 2 tablespoons extra virgin olive oil
  • Hot pepper flakes, to taste
  • Salt, to taste

  • Step 1

Preheat a large, oven-safe skillet (with a lid) over medium heat until hot. Add olive oil, garlic, onion, salt and hot pepper flakes to taste.

  • Step 2

Sauté onions and garlic in the preheated skillet for 3-4 minutes until wilted. Add cooked, sliced sausage and toss.

  • Step 3

Add chopped broccoli rabe to the skillet. Do not toss! Put the lid on and let steam for 5-6 minutes until broccoli rabe starts to wilt and turn bright green. Don’t toss or remove the lid for the full 5 minutes so the steam isn’t released!

  • Step 4

Toss to combine, and spread out your ingredients in an even layer.

  • Step 5

Place skillet in a 400-degree oven, uncovered, for 15-20 minutes until sausage and broccoli rabe start to brown and crisp up.

  • Step 6

Serve as-is, or with one of the delicious ideas from the post above!
