This soft and fluffy vegan cake gets its beautiful green color from the superfood moringa and is topped with whipped cream and fresh strawberries for a light and sweet dessert or snack.

  • 190 grams all purpose flour
  • 10 grams Moringa powder ⁣
  • 15 grams tapioca flour
  • 1 teaspoon aluminium-free baking powder⁣
  • 1/2 teaspoon baking soda ⁣
  • 100 grams sugar 
  • 1 cup soy milk or choice of plant-based milk⁣
  • 70 grams neutral oil
  • 1 tablespoon white vinegar 
  • vegan whipped cream
  • strawberries, sliced, to garnish


  • Step 1

    Preheat the oven to 180⁰C (375ºF). Line a tin with parchment paper.⁣

  • Step 2

    In a large bowl, slowly whisk milk into the olive oil. Continue to whisk until mixture is emulsified. Add sugar and mix well. 

  • Step 3

    In the same bowl, add the sifted dry ingredients and mix until just combined. Add white vinegar and mix well.

  • Step 4

    Pour the batter into the prepared tin.

  • Step 5

    Bake for about 20-25 minutes or until a toothpick comes out clean. Let t cool completely before decorating.

  • Step 6

    Decorate the cake with strawberries and whipped cream.
