For the Broccoli Chips
- 1 (10 ounce) bag Cascadian Farm Frozen Broccoli Florets
- 2 cups shredded Parmesan cheese
- Kosher salt, to taste
- Freshly ground pepper, to taste
- Garlic powder, to taste

For the Tahini Dip
- 1/4 cup tahini
- 1/4 cup fresh lemon juice
- 2 teaspoons Dijon mustard
- 2 teaspoons fresh chives, chopped
- 2 teaspoons dried parsley
- 1 teaspoon dried dill
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Cayenne pepper, to taste
- 1/4 teaspoon granulated sugar
- 2-4 tablespoons water, as needed
Method
To make the broccoli chips
Step 1
Preheat the oven to 400°F.
Step 2
Unthaw the frozen broccoli florets in a bowl of cold water for about 5 minutes.
Step 3
Bring a large pot of water to a boil and add a pinch of salt.
Step 4
Add the broccoli florets and blanch for 2 minutes.
Step 5
Strain and transfer the broccoli to a platter lined with paper towels.
Step 6
Place parchment paper on a baking sheet and sprinkle with a thin layer of Parmesan cheese.
Step 7
Place the broccoli florets on top of the cheese, spacing them 1 inch apart.
Step 8
Using the bottom of a measuring cup, firmly press down on the broccoli until flat.

Season well with salt, pepper, and garlic powder.

Transfer to the oven and bake for 30 minutes or until the cheese is golden brown and the broccoli is crisp.

To make the tahini dip
Step 1
Add the tahini, Dijon mustard, and fresh lemon juice to a medium mixing bowl (the mixture will be thick).

Add the fresh chives, dried parsley, dried dill, garlic powder, onion powder, cayenne pepper, and sugar.
Step 3
Slowly whisk in extra water until you reach the desired consistency.
Step 4
Transfer the dip to a small serving bowl and serve with the smashed Parmesan broccoli chips.
