Ricotta Mixture
- 15 ounces ricotta cheese
- 1 minced garlic clove
- 1 teaspoon basil
- 1 teaspoon oregano
- 1 teaspoon parsley
ingredients
Meatballs
- 1 diced onion
- 3 minced garlic cloves
- 1 large beaten egg
- 1/2 cup half-and-half
- 1/2 cup Italian breadcrumbs
- 1/2 cup Parmesan cheese
- 1 teaspoon pizza and pasta seasoning (or Italian seasoning)
- 1 pound ground beef
- 1/2 pound hot pork sausage
Method
Step 1
Preheat the oven to 375°F.
Step 2
In a bowl, combine the ricotta mixture ingredients and set aside.
Step 3
Heat olive oil in a skillet over medium heat and add the diced onion. Sauté until softened, then add the minced garlic and cook for an additional minute. Remove from heat and let cool.
Step 4
In a large mixing bowl, combine the whisked egg, half-and-half, breadcrumbs, Parmesan cheese, and ¾ cup of the prepared ricotta mixture.
Step 5
Add the cooled onion and garlic to the bowl, then add the ground beef and pork sausage. Gently mix until combined.
Step 6
Roll the mixture into 1½-inch meatballs and refrigerate for 15-20 minutes.
Step 7
In the same skillet, heat additional olive oil over medium-high heat, enough to cover the meatballs halfway. Brown the meatballs in batches, cooking for about 1½ minutes per side.
Step 8
In a 9x13 baking dish, spread ¾ of the Muir Glen Marinara sauce. Place the browned meatballs in the dish and top with the remaining marinara sauce.
Step 9
Cover the dish and bake for 30 minutes.
Step 10
Remove the cover, dollop the remaining ricotta mixture on top, and bake uncovered for an additional 15 minutes.
Step 11
Serve warm, garnished with fresh parsley and an extra dollop of ricotta cheese if desired.
