Grilled Peanut Butter & Green Apple Sandwich

1 tsp. Extra Virgin Coconut Oil (Trader Joe's)
2 slices sprouted whole grain bread (Food for Life Ezekiel)
1 medium green apple sliced 1/4 inch thick slices
2 tbsp. crunchy peanut butter (Crazy Richards)
Heat coconut oil in a skillet on medium heat. Spread one side of both slices of bread with 1 tbsp. of crunchy peanut butter on each slice. Add both slices to heated skillet and lower heat to medium low. Top one slice of bread with as many apple slices as possible, usually 2 layers works best. Slowly flip the peanut butter only slice on top of the apple slice. Continue to cook for an additional 2 minutes or until bread is toasty golden brown then very carefully flip the entire sandwich over until the other side is also toasty golden
Remove onto a plate and let cool for a couple of minutes to prevent too much peanut butter from oozing out of the sides. Enjoy!
Can also substitute green apples for red however the tartness of the green apples compliments the toasty bread and peanut butter perfectly!
