ingredients
- 1 1/2 cups gluten free rolled oats
- 1 1/2 cups almond flour
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 cup raisins
- 2 tablespoon chia seeds
- 1/2 cup honey
- 1/2 cup coconut oil or dairy free butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
Method
Step 1
Preheat the oven to 350℉ and line a cookie sheet with parchment paper. Set aside.
Step 2
Meanwhile, whisk together oats, almond flour, baking soda, cinnamon, raisins, and chia seeds in a medium bowl.
Step 3
In a large bowl, mix together the honey, melted coconut oil or butter, egg, and vanilla extract.
Step 4
Add the dry ingredients to the wet ingredients and mix together until a thick dough forms.
Step 5
Use 1 tablespoons of dough to form each cookie and place onto the prepared pan, leaving 1-2 inches of space in between each cookie.
Step 6
Bake for 12-14 minutes until golden brown.
Step 7
Let cool 5-10 minutes before serving.
