"I don’t know about you guys, but I think I might be ready for a change of season. Lately, my evenings have been spent curled up with a cup of tea and 2 (or 3) of these Cinnamon Oatmeal Raisin Cookies. As much as I love summer, I’m very ok with the crisp sunny days, roasted root veggies and abundance of baked goods that seem to go hand in hand with fall."

ingredients

  • 1 1/2 cups gluten free rolled oats
  • 1 1/2 cups almond flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 cup raisins
  • 2 tablespoon chia seeds
  • 1/2 cup honey
  • 1/2 cup coconut oil or dairy free butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract

Method

  • Step 1

    Preheat the oven to 350℉ and line a cookie sheet with parchment paper. Set aside.

  • Step 2

    Meanwhile, whisk together oats, almond flour, baking soda, cinnamon, raisins, and chia seeds in a medium bowl.

  • Step 3

    In a large bowl, mix together the honey, melted coconut oil or butter, egg, and vanilla extract.

  • Step 4

    Add the dry ingredients to the wet ingredients and mix together until a thick dough forms.

  • Step 5

    Use 1 tablespoons of dough to form each cookie and place onto the prepared pan, leaving 1-2 inches of space in between each cookie.

  • Step 6

    Bake for 12-14 minutes until golden brown.

  • Step 7

    Let cool 5-10 minutes before serving.
