Spicy Roasted Cauliflower Pita Pizzas

"I grew up in a lovely little place in regional New South Wales that's basically a mini Italy. I seriously doubted this claim - after all the town is effectively in the middle of no where on the other side of the world from Europe - but then I went to the actual Italy and promptly realised that I did indeed basically grow up in Italy itself, just minus the convenient proximity to Europe. Because of this, I love pizza. Pizza is life. Pizza is love. Which is why one of my favourite meals to recreate is....pizza! Except I am also experimental, arguably controversial and I have an addiction to avocado which is why pictured pizza isn't exactly the most conventional pizza you'll ever see but man, pita bread with avo sauce, spiced veggies and pine nuts ought to feature on Italian menus everywhere cause it's damn good and I am basically mama Italy herself.
